Peter Fassbender is the Executive Chef of Season's at Highland Lake Inn. A native of Chile, Peter is a 1998 Business Administration & Chef graduate of Instituto de Los Andes in Lima, Peru, and was awarded a Grand Diplome from Le Cordon Bleu in Paris in 2001. Before his debut at Highland Lake Inn in 2004, Peter lived and worked in South America, Europe, and the United States, and speaks English, Spanish, Portuguese and even a little bit of French and Italian.
Todd Mallin is the Banquet Sous Chef of Season's
at Highland Lake Inn. After graduating in 1997 with
a degree in culinary arts from Johnson & Wales
University Charleston, Todd spent three years at the
4-star, 4-diamond Pinehurst Hotel Resort in Pinehurst, NC. He has also worked at the 4-diamond Peabody Hotel, served as Banquet Chef at the East Memphis Hilton, Sous Chef for the PGA's Tournament Players Club Memphis, Sous Chef at the Madison Hotel's Grill, and has also worked at the Biltmore Estate. Todd is an accomplished ice sculptor and is an avid cyclist.
Amanda Julian is the Pastry Chef of Season’s at Highland Lake Inn. Born in Southern California, but raised in Western North Carolina, Amanda grew up baking with her mother. A 2008 Graduate of the AB Tech Pastry Art program, she has worked as a bread maker at the Flat Rock Village Bakery and came to Season’s in 2006. In her spare time Amanda enjoys traveling, being outdoors, reading and playing with her puppy Roxy.
